So Much To Be Thankful For…

All Things Considered Considers Cream Puffs

I hope you’ll tune in to NPR’s All Things Considered tomorrow, Thanksgiving Day, to spend a little time with host, Michele Norris (in the background) and me as we make pate a choux in her wonderful Washington, DC kitchen and turn the dough into cream puffs and gougeres, my all-time favorite cheese puffs.

As many of you know, I think of baking as magical, since what goes into the oven usually doesn???t give you even a slim hint of what will come out.  But among all the sweets that surprise me by their transformations, none seems as startling ??? or more magical ??? than cream puffs.  Make the dough, spoon small mounds of it on a baking sheet, slide it into the oven and sit glued to your oven window for a few minutes.  George Lucas couldn???t have created animation any more riveting than what you???ll see as the heat of your everyday oven causes the dough to puff and puff, grow round and, minute by minute, get lighter and lighter, until the puffs??? delicate shells are stretched to their limit, their custardy interiors are hollowed out and the balls look as though they???re light enough to lift off the sheet and go bouncing and bobbing around the oven.

Of course, if all they were was interesting, cream puffs would be nothing more than a lively science experiment.  What saves them is the indisputable fact that they???re delicious as well as fun to make, unusually versatile ??? they switch hit from both sides of the sweet-savory divide ??? and a classic in the French pastry canon.

 

Called pate a choux, or cabbage dough, a reference to the look of the puffs when they???re baked, the dough became celebrated when Marie-Antoine Careme, the early 19 th century chef who almost single-handedly created French pastry as we now know it, used it to make ??clairs, a treat that remains elegant to this day.

Detroit and the Pittsburgh Casino loan

This is purely an information question for my own curiosity.

The Rivers Casino nee Majestic Star was in trouble earlier this year as the original financing fell through due to a combination of the credit crunch and Don Barden’s company’s shaky finances. The new deal was a private equity buy-out that included several loans, one of which was guaranteed by Detroit’s municipal pension plans. Press release is here: Download News_20080819

the project cost is estimated to be approximately $780 million, with the new ownership guild investing over $200 million of new cash equity into the project. $405 million commitment be provided by a consolidate of lenders for which credit suisse acts as agent. in addition, $150 million will be provided by a syndicate of lenders for which key bank acts as agent. this $150 million will be guaranteed by two detroit pension funds.

Between the combination of a possible GM bankruptcy with the attendant job and revenue destruction, the massive drop-off in consumer discretionary spending (which casino gambling is a component of) and increased counter-party risk, I wonder what the value of that guarantee is? Those loans have to be getting risky right about now… I wonder what the impact is on the construction schedule if the investors/lenders get very nervous?

The Double Threat of Libiot Republicans Like Christie Todd Whitman

I know this post will expose me to criticism as a nasty pro-lifer who also happens to be a denier of the left’s second major sacrament, anthropogenic global warming. I welcome those criticisms for two reasons. First, I am proud to have a moral compass and enough common sense to realize that the climate changes? naturally. Second, I enjoy when libiots expose their character flaws.

I was reading a Roll Call column by former New Jersey Governor Christie Todd Whitman and I had an epiphany. Here we have a Libiot Republican that truly poses a double threat. I already knew Governor Whitman held a despicable viewpoint in regards to the slaughter of innocents in the womb (being for the slaughter of innocents in the womb qualifies as despicable.) So as I read her compilation of organic fertilizer, “We Can Win The Battle Over Climate Change,” I began to put two and two together. Actually, I began to see CO2 as a common thread that runs through this libiot’s stated positions.

The 111th Congress and the incoming Obama administration together are preparing to meet significant challenges at home and overseas ? and topping the list is putting our faltering economy back on the path of growth.

while there will be a temptation to zip all other priorities aside, i would admonition our elected leaders not to ignore what i believe is one of the most pressing long-term issues facing our economy and our environment: how we continue to fasten the get-up-and-go we determination need for the next 100 years without at damaging planet earth.

Voters of both major parties want affordable, reliable energy that does not pollute the air. Energy issues garnered significant applause when both candidates spoke to their party conventions about the issue. Americans clearly care about energy costs. They care

about avoiding the continued emission of carbon into our atmosphere, and they care about achieving energy independence for our country. As well they should.

While I certainly don’t take issue with the desire for new sources of energy or the desire to pollute as little as possible, I do take issue with this disciple of Al “Beached Whale” Gore’s focus on “emission of carbon.” This former libiot Republican Governor (or the female Arnold Schwarzenegger) supports a “Cap and Trade” system. In other words, she supports kicking American industry while it is down in the name of the great anthropogenic global warming scam!

Does Whitman’s crusade against carbon emitters explain her support of the slaughter of innocents in the womb? Perhaps her environmentalist nut-job core informs her abortion stance. After-all, for every baby that is not allowed to be born, that is one less carbon dioxide emitter “polluting” Al Gore’s environment.

Of course in true libiot form, the necessity of carbon dioxide and the fact that humans exhale it must be ignored in any discussion. All we should know is that it is a greenhouse gas and therefore must be bad! We are also expected to ignore the fact that water vapor is a greenhouse gas? or maybe we should cap water?

Imagine the day when these libiot Repubs and their accomplices in the new Democrat majority realize their goal and our economy is properly and artificially restricted by their crippling policies. Of course, given Obama’s infanticide priority , Governor Whitman’s double threat could be a sad reality.

Taylor Desk Clock ? Sleek & Stylin’ Time & Temperature

When you wanted to give a classy man-gift, for decades it meant that the object had to have real wood, chrome and/or brushed metal, angular design, and if at all possible hold a pen. This Taylor clock has “executive gift aisle” written all over it. Given the glacial pace at which men’s taste changes, this clock could come from the 60’s, 70’s, maybe even the 80’s. The clock takes a design cue from an airplane cockpit. The three dials measure your day as the hour tolls, the temperature rises, and humidity engulfs.

I like the looks of this U.S.A. made desk clock, but I’d need to restock my office with other sundries that are equally slick. I’m not complaining, though I will grouse a bit about battery installation. You have to unscrew the back of the clock to tip the mechanism out. I had a lot of difficulty adjusting the clock to keep good time, necessitating multiple disassemblies. Gauges

While the clock inspires admiration from the front, the rear invites scorn. If you’re the kind of high powered executive (or dad) who has this on his desk, do you really want the people that come cowering into your office to have to stare at the screwholes? What am I supposed to put back there? Some sort of manly doily?

I think that some man-gifts today still have these aesthetic qualities, but many more don’t. Where we once had the warmth of real wood, now we have textured plastic.
